Hey Microgreen enthusiasts! Have you ever harvested a lush batch of microgreens only to find them wilting in a day or two? The frustration of seeing your hard work lose its freshness too quickly is something every grower faces. But what if I told you there’s a way to keep your microgreens vibrant and tasty for up to 14 days after you havest them? That’s right—today, we’re unveiling the secrets to maximizing the shelf life of your microgreens.

At Amelia Island Microgreens, we’re dedicated to empowering you with the knowledge to grow your own nutrient-packed greens in just seven days. Our mission is to help you achieve better health through fresh, homegrown produce. And today, we’re tackling a crucial question: How long will microgreens last?

We all know that freshness is key when it comes to microgreens. Not only do they lose flavor as they age, but they can also become a breeding ground for mold if not handled properly. But don’t worry—we’ve got you covered. In this post, you’ll learn expert tips on harvesting, storing, and even enhancing the longevity of your microgreens. And stick around, because I’m about to share a pro tip later that will keep your greens fresher than ever!

To keep your microgreens at their peak, timing is everything. Harvesting at the right moment ensures that your greens remain crisp, flavorful, and full of nutrients. Before you start, here’s a crucial step: allow your microgreens to grow until you’re ready to use them. By harvesting only what you need, you’ll ensure the rest stay fresher for longer.

I recommend harvesting all of your microgreens by day 14, or sooner if they begin to taste bitter or develop a third leaf. Pea microgreens are an exception—they tend to get woody quickly, so aim to harvest them around day 8-10.

When it’s time to harvest, make sure to use clean, sharp scissors or a knife to cut your microgreens just above the soil line. This keeps everything tidy and prevents damage to your plants. And here’s a pro tip: avoid watering your microgreens for about 6 hours before harvesting. This little trick will keep them super fresh!

Now that you’ve harvested your microgreens, the next step is crucial—storing them properly. Freshly harvested microgreens can last anywhere from 5 to 14 days, depending on how they’re stored. Let’s dive into some tips to help you maximize their shelf life.

The secret to keeping your microgreens fresh lies in proper storage. After harvesting, one of the best ways to store them is in an airtight container with a dry paper towel. The paper towel absorbs excess moisture, which helps prevent mold and keeps your greens crisp.

Here’s how to do it:

  • Start by placing a dry paper towel at the bottom of an airtight container.

  • Lay your harvested microgreens gently on top of the towel.

  • Add another dry paper towel on top before sealing the container.

Storing the container in the fridge, ideally in the crisper drawer, helps maintain the right humidity level, allowing your microgreens to stay fresh for up to 10 days. Remember, moisture is the enemy—keeping your greens dry is key!

Another essential tip is to store your microgreens at a consistent, cool temperature. Temperature fluctuations can cause them to wilt faster and lose their crispness. By maintaining a steady cool temperature, you’ll help your microgreens stay fresh longer.

After harvesting, it’s important to remove any debris from the soil to prevent mold. We use coco coir, a sterilized coconut husk that’s safe but not particularly tasty. Make sure to avoid washing your microgreens until you’re ready to use them—extra moisture can lead to spoilage and mold growth. By keeping them dry, you extend their shelf life significantly.

Looking to extend the freshness of your microgreens even further? Consider dehydrating your microgreens and turning them into finishing salts—a fun and tasty way to preserve their benefits and add a nutritious punch to your meals. This is great for getting picky eaters to eat veggies since they wont taste it.

Keeping your microgreens fresh doesn’t have to be a challenge. By following these expert tips, you can enjoy your greens at their peak for longer. From harvesting at the right time to using advanced storage techniques, there are plenty of ways to extend the life of your microgreens.

And remember that pro tip I mentioned earlier? After washing your microgreens, give them a quick spin in a salad spinner to remove any excess moisture. This simple trick can make all the difference in keeping them fresher for longer!
